Sushi in the sun

Ingredients
- I cup of sushi rice
- 2 sheets of Obento Yaki nori for sushi
- 2 slices of smoked salmon
- 1/2 Lebanese cucumber
- 1/2 Carrot
- 1/4 cup of rice wine vinegar
- Pinch of salt
- Pinch of sugar
- Wasabi paste

Method
- Rinse rice well and add to rice cooker along with 1 and 1/2 cups of water. Set to cook.
- Chop carrot into thin slices. Chop cucumber longways into quarters and remove seeded sections, chop into thin slices.
- Allow rice to cool and dissolve salt and sugar in rice wine vinegar and mix well into rice.
- Lay nori sheet on Makisu (bamboo mat) and apply a thick layer of rice leaving a space at the back.
- Smear wasabi paste in a horizontal line on the rice and add a layer of smoked salmon on the line.
- Add carrot and cucumber slices on the line and roll to the space at the back. Wet the space and continue to roll securing the damp nori closed.
- Cut with a sharp knife into desired size pieces and serve. Serving Suggestion: mix a small amount of wasabi paste into soy sauce and dip away!
