Sushi sandwich

Ingredients
- Cooked sushi rice
- Sesame seeds
- Nori
- Avocado
- Shredded Carrots
- Mayonnaise
- Soy sauce
- 1 x can of tuna in spring water, drained
- Thinly sliced cucumber

Method
- Cook 2 cups of sushi rice in 2 1/4 cups of water in a rice cooker.
- Once cooked, cool slightly.And fluff with a fork to separate.Mix tuna with 1/3 cups of mayonnaise
- Lay nori, shiny side down and make a small cut half way.Leave this quarter plain, then add the sushi rice and tuna mix and sprinkle with sesame seeds.On the next quarter add the cucumber and carrots.On the last quarter add the avocado
- Fold up the sushi sandwich from the plain, to the rice and tuna, to the cucumber and carrots and finally to the avocado to form a sandwich
