Sweet Peach Chicken Stir-Fry

Ingredients
- STIR-FRY:
- 400g chicken tenderloins, cut into 1.5 inch pieces
- 1 Tbls neutral oil
- 3 or 4 mini rainbow capsicums, julienned (or 1 large capsicum)
- 1 onion, cut into thin wedges
- 2 Large peaches, peeled, cut into thin wedges
- 2 cloves garlic, crushed
- 1 Tbls ginger, grated
- SAUCE:
- 2 Tbls soy sauce
- 1 Tbls fish sauce
- 1 Tbls ABC extra hot chilli sauce
- 1/4 cup chicken stock
- 3 Tbls lime juice
- 1.5 Tbls honey
- 2 tsp corn flour
- TO SERVE:
- peanuts, toasted, crushed
- lime wedges
- fresh cilantro
- noodles or rice

Method
- Whisk together the soy sauce, fish sauce, chilli sauce, lime juice, honey, chicken stock and cornflour and set aside.
- In a wok or pan heat a tablespoon of oil over medium high heat. Add the chicken and cook for 2-3 minutes until slightly golden on one side, flip and continue cooking until almost cooked through. Remove the chicken to a plate and set aside.
- Lower the heat to medium low, add the onions and fry until just starting to wilt, add the garlic and ginger and fry until fragrant, about a minute. Add in the capsicum and fry for another 1-2 minutes tossing occasionally.
- Add the chicken back to the pan and pour in the sauce, toss the chicken through the sauce until the sauce starts to thicken and then gently toss through the peaches until just heated through. Remove from the heat.
- Dish the stir-fry out into two bowls, top with fresh cilantro, toasted peanuts and lime wedges. Serve alongside noodles or rice.
