Sweet & Savoury Sweet Potato Poke Bowl

Ingredients
- 1 cup rice
- 1 sweet potato
- Cucumber, sliced
- 1 avocado, sliced
- Picked ginger
- 1 tbsp soy sauce
- 1 tbsp oil
- 1 tbsp lime juice
- 1 tsp ginger
- 1 tsp garlic
- Pinch of chilli flakes
- 1 tbsp maple syrup
- KEWPIE Japanese Dressing Roasted Sesame

Method
- Toss sweet potato cubes with oil. Roast at 200°C for 20–25 minutes until tender and golden. Put rice in rice cooker.
- Whisk together soy sauce, maple syrup, vinegar, ginger, garlic, and chili.
- Toss roasted sweet potato in the sauce in a hot pan for 2–3 minutes until sticky and glazed.
- Toss cooked rice with sesame oil and avocado. Top with pickled ginger, cucumber and sweet potato chunks. Pour over a generous amount of KEWPIE Japanese Dressing Roasted Sesame. Enjoy!
