Taiwanese mazesoba

Ingredients
- Your preferred noodle
- 2 tbsp rice oil
- 300gram pork mince
- Garlic
- 1 tbsp sake
- 3 tbsp cili bean sause
- 1 tbsp soy sause
- Suger
- 45m water
- 2 tbsp mirin
- I tbsp chken stock
- Sesame oil
- Spring onion
- Seaweed
- Yolks

Method
- First, cook your preferred noodles and set them aside. Heat rice oil in a pan, then sauté minced garlic until fragrant before adding the pork mince. Splash in sake, then stir in chili bean sauce, soy sauce, sugar, water, mirin, and chicken stock. Let everything simmer until the pork is fully cooked and the sauce becomes rich and slightly thick.
- Add a drizzle of sesame oil to the pan and mix well to deepen the aroma. Toss the cooked noodles directly into the sauce, coating them evenly so every strand absorbs the spicy, savory flavor.
- Serve the noodles in a bowl and top with chopped spring onions, shredded seaweed, and a raw egg yolk in the center. Mix everything together just before eating — the yolk melts into the sauce, making the dish extra creamy, spicy, and dangerously addictive.
