Takoyaki-inspired Prawn & Mushroom Savoury Muffins

Ingredients
- Batter: 1 egg, 450ml Dashi stock, 1 tsp Squid fish sauce, 100g all purpose flour, 1 Tbsp soy sauce. Oil
- Filling: 60g raw prawns, 10g dry shiitake mushrooms, 3 Tbsp chopped shallots
- Toppings: bulldog sauce, kewpie mayonnaise, nori strips, bonito flakes

Method
- Heat oven to 180 degrees, brush muffin tin, heat in oven
- Heat dashi stock, fish sauce & soy sauce on stove. Rehydrate mushrooms and slightly cook prawn in this stock. Pour through sieve and set mushrooms & prawns aside to cool. Whisk egg and flour into stock.
- Cut up mushrooms & prawns
- Pour batter into muffin holes, half way full. Drop in mushrooms, prawns & shallots. Fill muffin holes with rest of the batter . Cook in oven for 15mins
- Top muffins with bulldog sauce, mayonnaise, nori & bonito flakes
