By: Athena Politis
Ingredients
- For the stir fry sauce, 3 tablespoons Lee Kum Kee Panda Brand Oyster Sauce
- For the stir fry sauce, 3 tablespoons soy sauce
- For the stir fry sauce, 1 teaspoon sugar
- For the stir fry sauce, 1 teaspoon chilli flakes
- Extra oyster sauce, soy sauce, chilli flakes, salt, and pepper, for marinating
- 250g Beef rump steak chopped into small cubes
- 2 garlic cloves chopped and kept separately
- 1 small carrot julienned
- 170g mushrooms sliced
- 3 spring onions cut into 3cm pieces
- Tablespoon of chopped chives
- 2 eggs whisked
- Packet of Pad Thai noodles
- Oil of your choice
Product used in recipe
- LEE KUM KEE - PANDA BRAND OYSTER SAUCE
Method
- Add stir fry sauce ingredients in bowl and use tablespoon to mix together, set aside.
- In a small pan, cook egg omelette style and let cool. Once cooled, chop into rectangles.
- Boil salted water, cook noodles for 5 minutes then drain and rinse with cool water. If you choose to, use a knife to roughly cut the noodles into smaller pieces. Set aside.
- In a pan, add oil and fry 1 clove of chopped garlic, then add the beef. Cook meat until brown. Whilst cooking, conservatively marinate the meat with the extra oyster sauce, soy sauce, chilli flakes, powdered ginger, salt and pepper to add taste. Set aside once cooked.
- In a wok, add oil and fry 1 clove of chopped garlic for 1 minute. Add mushrooms and carrot and fry until cooked (can lightly marinate with some extra oyster sauce, salt sauce, chilli flakes, salt, and pepper, if you choose too). Add cooked beef and mix together whilst continuing to cook in wok. Add a little of the prepared stir fry sauce mix to further marinate the mushrooms, carrot and meat.
- Add noodles to wok then add rest of prepared stir fry sauce mix. Stir through noodles, sauce and other ingredients (ie. mushrooms, carrot) with heat on. Add chives and spring onions, stir through well with heat on. Then stir through pieces of omelette until whole mixture is warm and ready for serving.
