Tasty Thai Green curry

Ingredients
- 1 small chicken breast, chopped
- 1 tbsp neutral oil
- 1 tbsp of Valcom Thai Green curry paste
- 1 tbsp of brown sugar
- 3/4 cup of frozen sliced beans
- 1 handful of baby spinach leaves
- Basmati rice to serve (quick cook microwave single portion)Coriander garnish to serve
- 250 mls of coconut milk

Method
- Heat oil in a large frypan Add curry paste and gently heat for 2 minutes.Add chicken and brown for an additional few minutes.
- Add coconut milk and simmer for 10 minutes. Add green beans, brown sugar and simmer for an additional 5 minutes.(Prepare rice and coriander garnish whilst beans are simmering)
- Add spinach to the curry, stir through and remove from heat immediately.Place rice in a serving bowl, spoon curry over the rice and sprinkle with coriander.Enjoy!!
