Ingredients
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- 1 brown onion, diced
- 1 medium carrot grated
- 1 medium zucchini grated
- 1 thumb ginger grated
- 500g beef mince
- 3 tbsp soy sauce
- 3 tbsp mirin
- 3 tbsp cooking sake
- 1 tbsp dark soy
- 1/2 tsp sugar
- Coriander for garnish
Method
- Heat oil in large frying frying pan. Add all vegetables (onion, garlic, ginger, carrot, zucchini) to hot oil and cook until water leaches and mostly evaporates. 4-6 minutes. Once vegetables are translucent, add in beef mince and cook until browned.
- To make the sauce, combine the soy, cooking sake, mirin, dark soy and sugar. Once beef mince has browned, add sauce and cook for about 5-10 minutes until sauce thickens.
- Serve over rice with coriander.
