Teriyaki beef bowls

Ingredients
- 1 tbsp canola oil
- 2 garlic cloves
- 1 brown onion
- 1 carrot, peeled and grated
- 1 zucchini, grated
- 500g beef mince
- 3 tbsp (45ml) soy sauce
- 3 tbsp (45ml) mirin
- 3 tbsp (45ml) cooking sake
- 1/2 (half) tsp white sugar
- White rice to serve

Method
- Mix the soy sauce, mirin, cooking sake and sugar in a small bowl.
- Heat oil in frypan over high heat. Add garlic and onion, stir for two minutes until onion translucent. Add the carrot and zucchini, then cook for further 3 minutes until water leeches out of the vegetables and it mostly evaporates.
- Add the beef and cook, breaking it up as you go, until it changes from red to brown. Add the teriyaki sauce and cook for 4 minutes until sauce evaporates and beef is a little caramelised.
- Serve the teriyaki beef over rice
