Theme: One Bowl Wonder
Teriyaki chicken

Ingredients
- Soy sauce - 2 TBS
- Cooking sake - 2 TBS
- Mirin - 2 TBS
- Raw sugar - 1 tsp
- Water - TBS
- Honey to drizzle
- Vegetables to serve: steamed or stir fried broccoli, cauli, edamame or fresh cucumber and carrot sticks + kewpie
- Protein; 1kg of chicken thighs (skinless & boneless) for vegetarian, substitute firm tofu cut into 1cm slices (or half and half - keep separate if so)
- 2 cups rice to serve
- Vegetables oil to fry

Method
- Put soy, sake, mirin, sugar and water into a small saucepan and boil on low for 5-10 mins until it thickens. Allow to cool (about 10 mins) and keep a couple spoonfuls aside for serving.Pour marinade over protein and allow to marinate (overnight is good, otherwise do what you can - while you prep the rice and veggies).
- Prep veggies however you like them;have fresh cucumber, carrot and capsicum sticks (summer) with kewpie mayo. Or (for winter) steam or stir-fry them with garlic, ginger and a dash of sesame oil.Put rice on to cook; Wash, drain and cook the rice by packet instructions (absorption method is best).
- Heat a large frypan or skillet on high heat - one with a lid is best. Fry the protein and cook for about 5-7 mins each side until cooked through.Remove from pan and cut into strips, or leave as one piece.
- Serve protein with rice and veggies and the extra sauce from the start. Drizzle the protein with honey (to taste) for Honey-Soy flavour or leave savoury.
