Teriyaki inside out sushi

Ingredients
- 1 Chicken breast
- 1/4 cup teriyaki marinade
- 1 teaspoon white miso paste
- 2 cloves garlic, minced
- 1 cup sushi rice
- Obento sushi seasoning
- Obento yaki nori
- 1 avocado, sliced
- Black sesame seeds
- Kewpie mayo
- Fried garlic
- Bonito flakes
- Fried shallots

Method
- 🔪 Step 1: Cook & Season the Rice1. Rinse 1 cup sushi rice under cold water until water runs clear.2. Cook according to packet instructions (usually 1 cup rice + 1¼ cups water).3. Once cooked, transfer to a wide bowl.4. While warm, gently fold through 2–3 tablespoons of Obento Sushi Seasoning.5. Let cool to room temperature (cover with a damp cloth to stop it drying out).
- Step 2: Teriyaki Chicken1. Finely mince 1 clove garlic.2. Slice chicken breast in half lengthways (for quicker cooking).3. Marinate chicken in teriyaki sauce, miso paste + minced garlic for at least 20 minutes (longer = more flavour).4. Pan fry over medium heat until cooked through and caramelised.5. Let rest, then slice into thin strips.
- Step 3: Prepare Fillings* Slice avocado into thin strips.* Have sesame seeds and fried garlic ready.* Place Obento Yaki Nori sheets nearby.
- Step 4: Assemble Inside-Out Roll (Rice on Outside)1. Place a sheet of nori shiny side down on a bamboo mat.2. With damp hands, spread a thin, even layer of sushi rice over the nori (cover completely).3. Sprinkle black sesame seeds over the rice.4. Carefully flip the whole sheet over so the rice is facing down on the mat and the seaweed is now on top.5. Across the centre of the nori, add: * Teriyaki chicken strips * Avocado slices * A drizzle of Kewpie Mayonnaise * A sprinkle of fried garlic6. Using the mat, roll tightly away from you, keeping the filling tucked in.7. Gently squeeze to shape into a firm roll.
- Step 5: Slice & Serve* Use a very sharp knife (wipe with damp cloth between cuts).* Slice into 8 pieces.* Optional: Drizzle a little extra teriyaki or mayo on top, sprinkle with sesame seeds, fried garlic or onion and top with bonito flakes.
