Teriyaki salmon skewers & vegetables

Ingredients
- Salmon fillet 300g
- 2 tablespoons teriyaki marinade
- 2 teaspoons olive oil
- 1 green capsicum
- 1 red capsicum
- 1 red onion
- 6 mushrooms
- Handful of baby rocket leaves
- 2 teaspoons sesame seeds

Method
- Cut salmon into cubes and thread onto 4 skewers. Put into a shallow dish and pour 1 tablespoon teriyaki marinade over and turn over to coat.
- Chunky vhop capsicums, halve mushrooms, and cut red onions into narrow wedges. Place in bowl and pout remaining marinade over and stir to coat.
- Using 1 tsp olive oil in a hot frypan, cook salmon skewers 2 minutes each side until cooked through. Remove from pan & put aside
- In same pan add remaining olive oil and marinated vegetables. Cook on high until slightly charred and soft.
- Put half the rocket on each plate. Add vegetables and skewers. Sprinkle with sesame seeds.
