Teriyaki Seared Salmon on Cold Soba Noodle Salad

Ingredients
- 270gm Soba Noodles
- 100gm Edamame, Blanched
- 1 Continental Cucmber, Sliced or Julienned
- 2 Tbsp. Japanese Pickled Ginger
- 4 Tbsp. Chopped Mint
- 4 Tbsp. Chopped Coriander
- 4 portions of Salmon Skinon
- 2 Sheets of Nori
- 4 Tbsp. Sesame Seeds
- 1 Jar Obento Teriyaki Marinade
- 20 ml Mirin
- 20 ml Pickled Ginger Juice
- 20 ml Cooking Sake
- 1 teaspoon granulated sugar
- 20 mls Soy Sauce

- OBENTO - MIRIN SEASONING
- HAKUBAKU - ORGANIC SOMEN NOODLES
- OBENTO - SLICED PICKLED GINGER
- OBENTO - COOKING SAKE
- ABC - MEDIUM SWEET SOY SAUCE
Method
- Marinate Salmon Pieces in Obento Teriyaki Marinade, place in fridge for 3-4 hours, turning every hour
- To make Salad:-Cook Noodles in boiling water until soft (5-10 minutes), refresh under running cold water and drain.-Toast Sesame seeds on stove in dry skillet until brown, set aside.-Combine Cooked Noodles, Drained Pickled Ginger, Edamame Beans, Cucumber, Coriander and mint in a bowl.-Mix together Mirin, Soy, Sugar and Sake and add to salad, tossing.-Add toasted Sesame Seeds to Salad.
- Sear Salmon in hot pan, Skin side down until skin crispy (5 minutes), turn and sear other side of Salmon until desired doneness.
- To Serve:Place Noodle Salad in bowls, top with Teriyaki Seared Salmon and Crumble Nori Sheets on top for Garnish.
