Thai Coconut Curry Meatballs

Ingredients
- 500g Chicken Mince
- 1 egg
- 1/2 cup breadcrumbs
- 2 Tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 teaspoon ginger
- 1 clove garlic minced
- Onion
- 1 can coconut milk
- 1/2 cup chicken stock
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1/4 cup fresh coriander
- 1/4 cup spring onions

Method
- Make meatballs with ingredients 1 - 7. Fry in a little oil until brown. Set aside.
- Make the sauce. Fry onions and add ingredients 8-13
- Return meatballs to sauce and simmer. Garnish with spring onion and coriander. Serve with basmati rice.
