Ingredients
- Chicken thigh
- Green curry paste
- Oil
- Coconut milk
- Tin bamboo shoot slices
- Broccoli
- Green beans
- Steamed jasmine rice to serve
- Store bought roti to serve
Method
- Heat oil in saucepan, add curry paste and fry until fragrant, then add chicken and toss to seal
- Add coconut milk and simmer with lid on until chicken cooked
- Add bamboo shoots, broccoli and beans - cook further 5 minutes lid off
- Serve with rice and roti
