Ingredients
- Green curry paste
- Coconut milk
- Eggplant
- Carrot
- Chicken breast
- Bamboo shoots
- Zucchini
- Fish sauce
- Bamboo shoots
- Lime
- Jasmine Rice
Method
- Fry 2 table spoons Green curry paste with small amount coconut milk
- Add remaining coconut milk, carrot & eggplant cook until soft. Then add zucchini & diced chicken thighs
- Add 2 tablespoons of fish sauce & squeeze of lime
- Stir in drained can of bamboo shoots
- Serve with cooked Jasmine rice
