Thai green chicken curry with wild rice & chapati

Ingredients
- 500gm chicken breast
- 1:2 jar green curry paste
- 400ml coconut milk can
- 2 tbsp fish sauce
- 1 tbsp keto sugar (allulose)
- Mix of cubed potato, zucchini, green beans, onion
- Thai basil and spring onion & lemongrass
- Wild rice and chapati to serve

Method
- Fry paste over med heat in a saucepan with lid until fragrant. Add 200ml coconut milk along with chicken stir fry about 5 mins add the veg in similar sizes
- Add remaining ingredients except herbs and simmer for 10 mins with lid on or until veg & meat is cooked, stirring occasionally.
- Add herbs, keep simmering. Get meal prep containers and serve up for tasty easy work lunches. At work - heat the chapati in sandwich press and heat rice pouch in microwave. Serve ! Yummo
