Thai green mango prawn salad

Ingredients
- 4 TBS Fish sauce
- 500g raw prawns
- 3 green mangos
- 2 TBS grated ginger
- 4 garlic cloves grated
- 2 carrots
- Bunch of mint
- Bunch coriander
- Half red onion
- 2 spring onion shots
- 1/4 cup of crushed peanuts
- 3 limes juiced
- 1 TBS of sesame oil
- 2 TBS brown sugar
- Optional edible flowers
- Optional Thai chilli

Method
- Peel then mandolin Or thinly slice your mangos, carrots and red onion and place into large mixing bowl.
- Chop mint, spring onion and coriander finely and add to bowl with crushed peanuts ( chilli if desired) mix
- In a small pan, heat sesame oil on medium high heat add grated garlic and prawns cook until they turn pink and smell fragrant set aside
- In small bowl juice limes, add fish sauce, grated ginger and brown sugar and mix well.
- Combined all ingredients and enjoy
