Thai Pork Salad

Ingredients
- 500 grams Pork
- 1 tablespoon Olive Oil
- 1 teaspoon crushed garlic
- 1 teaspoon crushed ginger
- 1 red chilli
- Zest and juice of 1 lime
- Quarter cup fish sauce
- 1 tablespoon soy sauce
- 250 g microwave rice
- 1 bunch coriander
- 1 bunch mint
- Crushed peanuts
- Cos lettuce

Method
- Cook mince, breaking up any lumps in olive oil.
- Add garlic, ginger,chilli, lime zest and juice, fish sauce, soy sauce to pork. Cook for a few minutes till fragrant.
- Add microwaved rice, stir to combine and cook until heated through
- Stir through lightly chopped herbs.
- Top with peanuts and serve with lettuce cups.
