Thai-Style Red Curry Dumpling & Bok Choy Bake

Ingredients
- 1 packet of frozen dumplings of your choice - 15-20 pieces
- Bok choy: 4 cups, chopped.
- Garlic: 3 cloves, minced.
- Limes: 2 (one for the juice in the bake, one for serving wedges).
- 1 400ml can of coconut milk
- Rice to serve
- Red curry paste: 2 tbsp
- Oyster sauce: 1 tbsp.
- Rice vinegar: 2 tsp.
- Peanut butter: 1 tbsp.
- Sesame oil: 1 tbsp.
- Sesame seeds for garnish
- Soy sauce: 1 tbsp.

Method
- Prep the Base: Preheat your oven to 200°C (180°C fan). In a 9×13 pan, whisk together the coconut milk, curry paste, garlic, ginger, soy sauce, oyster sauce, peanut butter, sesame oil, rice vinegar, and lime juice.
- Assemble and Bake: Stir the chopped bok choy into the sauce and arrange the frozen dumplings on top in a single layer. (Pour the sauce over the dumplings to prevent them from drying out) Cover the pan tightly with foil and bake for 25–30 minutes until the dumplings are cooked through.
- Garnish and Serve: Remove the foil and finish the dish with chili, green onions, sesame seeds. Serve hot directly from the pan.
