The family favourite: delectable no fuss salmon sushi bake.

Ingredients
- 2 large avocados
- 4x 200g salmon portions
- Kewpie mayonnaise
- ABC ketchup manis
- Furikake
- Sesame oil
- Sesame seeds
- Olive oil
- Sushi rice
- Minirin
- Salt
- Obento yaki nori
- Spring onions
- Sugar

Method
- Cook 2 cups of sushi rice in the rice cooker
- While the rice is cooking, get on to the food preparation. Start by cutting the avocado into thin slices and put aside.
- In a medium to large sized frying pan, add a small amount of olive oil and bring frying pan to medium heat. Season the salmon portions with salt and fry the salmon until cooked (start skin side down first). This should take about 6 minutes. Remove from frying pan and shred the salmon in another bowl. Add Kewpie mayonnaise and ketchup manis and mix together. Add qty according to taste and preference.
- Once the rice is cooked, transfer into a baking dish and mix minirin, a tbsp of sugar, sesame oil, furikake. I also like to add shredded yaki nori into this rice mixture for added flavour. Flatten the rice in the bottom of the baking dish.
- Then add the yummy toppings! First, layer the rice with the sliced avocado. Then on top of the avocado layer, spread evenly the salmon mixture. Top with more furikake, drizzle Kewpie mayonnaise, ketchup manis and sprinkle with sesame seeds and chopped spring onions.
- Place into the oven at 180 degrees Celcius for about 15 minutes, then serve with obento yaki nori sheets that have been cut into quarters. Yum!
