Three-cup chicken noodles

Ingredients
- 450g Udon noodles
- 2tsp olive oil
- 500g Chicken thigh fillets diced
- 2 cups Thai basil leaves
- 1tbs Ginger grated
- 1tbs Garlic grated
- 3tbs Chinese cooking wine
- 1tbs Brown sugar
- 1tbs Sesame oil
- 2tbs All purpose soy sauce
- 1tbs dark soy sauce

- LEE KUM KEE - PREMIUM DARK SOY SAUCE
Method
- For the sauce in a small bowl whisk together ingredients and set aside
- Heat olive oil in pan add chicken and cook 4 minutes until golden brown. Add ginger and garlic cook 30 seconds
- Pour in sauce and add udon noodles and toss together
- Remove from heat and stir in Thai basil letting them wilt slightly and serve immediately
