Throw Together Tofu Kari

Ingredients
- 450g firm tofu, roughly crumbled
- 1 x 400g can diced tomatoes
- 1 cup frozen peas
- 1 cup soy milk
- 2 tsp curry powder
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 3 Tbsp soy sauce

Method
- Heat oil in a large saucepan over medium-high heat.
- Add the roughly crumbled tofu and cook for 4–6 minutes, stirring occasionally, until lightly golden.
- Add curry powder, garlic powder, onion powder, black pepper, and frozen peas. Stir well to coat the tofu evenly and cook for a further 2–3 minutes until fragrant.
- Add 1 tablespoon of soy sauce and stir to combine.
- Pour in the diced tomatoes, soy milk, and remaining soy sauce. Mix well.
- Reduce heat to low and simmer for 3-4 minutes, stirring occasionally, until heated through and slightly thickened.
