Tofu Mishi

Ingredients
- 350g Tofu
- 4 tbsp Mirin
- 4 tbsp Cooking Sake
- 600 ml water
- 4 tbsp soy sauce
- sesame seeds
- bok choy x 2
- spring onions
- 1 tbsp miso paste

Method
- Cover tofu in paper towels and microwave for 3 mins
- Mix water, soy sauce, mirin (obento), cooking sake (obento) and miso.
- Uncover tofu and slice into 6 pieces. Add into the water mix, cover with foil and the lid and simmer for 50 mins. After 45 mins, add in the bok choy. Then chop up spring onions.
- Serve and add sesame and spring onions as a garnish.
