Tofu Salmon Sushi Cups

Ingredients
- 100gms fried firm tofu
- 300gms skinless salmon fillets
- 2 teaspoon seasoned soya sauce for seafood
- 1/2 teaspoon salt
- 2 tablesp mayonnaise
- 2 cups cooked sushi rice
- 2 tablesp sushi seasoning
- 12 Nori small squares
- Toasted sesame seeds
- Chopped spring onions
- Yuzu Lemon
- Canoga oil spray

Method
- Preheat oven to 200C.
- Cut tofu & salmon fillet into small cubed squares. Put it in a bowl & add salt, seasoned soya sauce for seafood and mayonnaise. Mix it well.
- In a bowl add cooked sushi rice & sushi seasoning. Mix well till all combined.
- Lightly grease a 12 tin muffin tray with spray oil. Place a square of nori into each muffin tin, add 1 tablesp spoon of sushi rice & top it with 1 tablesp of tofu & salmon mixture. Spray cooking oil over it.
- Bake at 200C for 20 minutes. When cooked, garnish with toasted sesame seeds & chopped shallots.Delicious with yuzu lemon juice.
