Tofu Soba Noodle Salad

Ingredients
- 300g Tofu
- Hakubaku Soba Noodles
- Packet of Kale Slaw or any premixed slaw
- Mint
- Half a Lime
- Chilli
- Sesame seeds
- 1 tbsp sesame oil
- 1.5 tbsp soy sauce
- 1 tbsp honey or maple syrup

Method
- Cook the soba noodles according to packet instructions
- Meanwhile, chop up your tofu and pan fry in a little bit of olive oil until golden
- Mix together the dressing ingredients - sesame oil, soy sauce, lime and honey.
- Drain noodles and put in a large bowl. Add cooked tofu, kale slaw, chopped mint and dressing. Mix well to combine.
- Divide between bowls. Top with chilli, sesame seeds and extra lime.
