Tom Yam Goong

Ingredients
- 6 tbsp Valcom Tom Yam Curry Paste
- 400g Cooked Prawns
- 5 Kaffir Lime Leaves
- 12 Cherry Tomatoes (cut in halves)
- 150g Shiitake mushrooms
- 6 tbsp Fish Sauce
- 2 tsp White Sugar
- 8 tbsp Coconut Milk
- 2 Stems Lemongrass (sliced)
- 8 cups Chicken Stock
- 6 Shallots (sliced)
- 1 tbsp Minced Ginger
- 2 Birds Eye Chillies (finely sliced)
- 1 Lime (squeezed)
- 2 Stem Coriander Leaves
- Low GI White Rice (for serving)

Method
- Add the chicken stock, coconut milk, tom yam paste, fish sauce, lime juice, minced ginger, and sugar into a pot. Heat until boiling. Stir the soup.
- Add the lemongrass, kaffir lime leaves, chillies, and coriander into the pot. Stir the soup.
- Add the shallots and prawns, and stir.
- Add the mushrooms and cherry tomatoes and stir. Leave boiling for 3 minutes.
- Remove from heat and serve. Eat with rice.
