Tom yum soup

Ingredients
- Lemongrass, onion, garlic, tamarind powder, chicken stock powder, brocolini
- Fish sauce, olive oil, water, lime juice. Coconut cream optional.
- Prawns or any protein of choice

Method
- Heat up an onion, 2 cloves of garlic and some lemongrass with 1 teaspoon of olive oil for 1 minute until fragrant.
- Add 2 cups of water, 1 tablespoon chicken stock powder, 1 teaspoon tamarind powder, 2 tablespoon of tom yum paste, the brocolini and prawns.
- Add juice of half a lime and a teaspoon of fishsauce. Let simmer for 5 minutes. Feel free to add a dash of coconut cream before serving.
