Tuna cucumber sushi

Ingredients
- Sushi rice
- Seaweed sheets
- Tuna in spring water
- 1 cucumber
- Rice wine vinegar
- Caster sugar
- Salt
- Kewpie mayo

Method
- Make the sushi according to the packet
- Add sushi rice seasoning once rice has cooled (1/2 cup rice wine vinegar 2tbsp of caster sugar 1/2 tsp salt) Drain Tuna and add 3-4tsp of kewpie mayo. Salt and pepper to taste
- Slice cucumbers long ways remove seeds. Place cooled rice over seaweed sheet thinly (shiny side facing down) place fillings in the middle of the flatten rice
- Using a bamboo mat roll into a log Cut into slices using a wet sharp knife
