Tuna sushi

Ingredients
- 3 cups rice
- Nori sheets (yaki nori for sushi)
- 1 cucumber (cut into strips)
- Japanese mayonnaise (Kewpie)
- Tuna
- 2 tbsp rice vinegar
- 1/4 tbsp salt
- 1 tbsp sugar
- Soy sauce (to serve)
- Sriracha (to serve)Kewpie

Method
- Boil 3 cups of rice until cooked, then drain and rinse off the excess starch.
- Cut the cucumber into long thin strips.
- In a small bowl, mix 2 tbsp rice vinegar with 1 tbsp sugar and 1/4 tbsp salt until dissolved.
- In another bowl, mix the tuna with Japanese mayo (Kewpie).
- Mix the cooked rice with the vinegar mixture and allow it to cool slightly.
- Place a nori (sushi sheet) on a sushi mat, then spread the rice evenly on top.
- Add a cucumber strip and a spoon of tuna, then roll tightly into a sushi roll.
- Slice and serve with sriracha and soy sauce.
