Ingredients
- 2 cups Sushi rice
- 1 pack Obento Yaki Nori for sushi
- 1 x 425g chunk style tuna in spring water, drained
- 6 tblspn Obento sushi seasoning
- 4 tblspn Kewpie Mayonnaise
- 1 avocado, cut in quarters and sliced in 5mm
- 1 Lebanese cucumber, cut in half, quartered lengthways, seeds removed and sliced
- Salt and pepper
- Soy sauce and wasabi, for serving
Method
- Cook Sushi rice according to packet directions and allow to cool
- Mix sushi seasoning into the sushi rice
- Mix together the tuna and kewpie mayonnaise and season with salt and pepper to your liking
- Place one sheet of yaki nori on a bamboo sushi mat, shiny side down. Place two large spoonfuls of sushi rice on the yaki nori and spread evenly using the back of a wet spoon leaving 3cm at one end.
- Place a spoonful of the tuna mixture on top of the rice, spreading across the width of the yaki nori at the opposite end of the 3cm gap
- Layer slices of avocado and cucumber next to the tuna
- Roll up to create a sushi roll and cut using a wet knife
- Repeat until remaining ingredients are used up
- Serve with soy sauce, wasabi and pickled ginger
