Udon Noodle Soup (Kake Udon)

Ingredients
- 4 cups dashi (Japanese soup stock)
- 2T mirin
- 2t sugar
- 3T soy sauce
- 1/4t salt
- 1 or 2 eggs per person, as desired, hard or soft boiled
- Cubed fried tofu (optional)
- 1/2 cup frozen corn
- 2 stems spring onion, finely sliced
- 2 packets Obento udon noodles

- OBENTO - MIRIN SEASONING
- LEE KUM KEE - GLUTEN FREE SOY SAUCE
Method
- Add dashi, mirin, soy, sugar & salt to saucepan and bring to a gentle simmer.
- Prepare noodles according to packet directions, then drain when cooked.
- Add corn (and tofu, if using) to broth.
- Distribute udon to individual bowls and pour or ladle the broth over them.
- Top with the eggs & spring onion. Enjoy!
