Ultimate Katsu Sushi Bowl

Ingredients
- 2 1/2 cups of Long grain rice
- 6 crumbed chicken burgers
- 1 cucumber, diced
- 2 avocados diced
- 6tsp furikake seasoning (for on top 1 tsp per serving)
- 2 tbsp rice wine vinegar
- Pinch of salt (to season)
- Drizzle of kewpie mayo (for on top)
- Drizzle of abc sauce (for on top)
- 6 x sheets of Obento yaki nori sheets cut into squares

- ABC - SWEET SOY SAUCE
- KEWPIE - MAYONNAISE
Method
- 1. Rinse 3 cups sushi rice until water runs clear. 2. Cook via rice cooker or stovetop. 3. While hot, fold through: • 2 tsp rice vinegar & a pinch of saltLet cool slightly (warm, not steaming, for handling).
- • Cook crumbed chicken burgers until golden. • Chop into small bite-size cubes or strips
- In a bowl, serve Cooked vinegar rice • Chopped chicken • Light drizzle kewpie • Light drizzle ABC sauce • sprinkle the furikake and sesame seeds
- Cut yaki nori sheetsTo serve: Place a spoonful of rice-chicken mix onto a nori square. Top with: • Avocado • CucumberENJOY!
