Method
- Prep veggies: Cut all vegetables. Slit brinjals and potatoes. 2. Make stuffing: Mix coconut, coriander, peanut powder, chilli-ginger paste, cumin, ajwain, turmeric, chilli powder, salt, sugar, and lemon juice.
- Stuff veggies: Fill stuffing into brinjals, potatoes, and bananas. 4. Cook base: Heat oil in a heavy pot. Add ajwain + cumin.
- Add hard veggies: Put yam, sweet potato, potatoes. Sprinkle salt & turmeric. 6. Add stuffed veggies: Add brinjals, banana, papdi, remaining stuffing.
- Slow cook: Cover and cook on low heat, stirring gently, till veggies are soft. 8. Finish: Add lemon juice & fresh coriander. Mix lightly.
