Upside Down Sushi

Ingredients
- 4 x cups of seasoned cooked sushi rice (quick microwaveable variety)
- 1 x pack of obento yaki nori for sushi (seaweed sheets)
- 2 x avocados sliced
- 1 x cucumber sliced thin and round
- Tuna mix (large can of cooked tuna in oil, kewpie mayonnaise and a handful of chopped spring onion, salt and pepper)
- 400g cold/ pre-cooked chicken (can be crumbed) sliced
- Kewpie mayo
- Kewpie sriracha mayo (optional)
- Sesame seeds (optional)
- Soy sauce

Method
- You will need a rectangular baking tray and / or cupcake tray and a flat serving tray or board of the same size.You will also need plastic wrap, wooden spoon, chopping board, knife, mixing spoon and a container to mix the tuna mix.
- Place a layer of plastic wrap on the tray.Layer the toppings onto the plastic wrap in the bake tray starting with the avocado on top followed by crispy chicken, cucumber, rice and then seaweed. Press firm.
- Place flat tray on top and turn over quickly holding together firmly.
- Peel off the plastic wrap, decorate with the kewpie and sesame seeds, slice to serve with soy sauce and other preferred condiments.
