Vegetable fried rice with vegan mince

Ingredients
- 2 cups Cooked rice
- 3 eggs (optional)
- 1 tablespoon soy milk
- V2 plant protein mince
- 1 red onion, diced
- 1 tray baby corn, chopped into short sticks
- 1-2 carrots, diced
- 1 small red capsicum, diced
- 2 large handfuls green beans, chopped into 2 cm lengths
- 2 tablespoons ABC kecap manis
- 1 tablespoon vegan oyster sauce
- 2 cloves garlic, crushed
- 1 tsp grated ginger
- 2 tablespoons olive oil
- Salt and pepper
- Aioli (to serve)
- Chilli, sliced (optional)
- 1 tbs fresh basil,, chopped

Method
- Crack eggs into a bowl. Add soy milk. Season with salt and pepper. Mix well with a fork or whisk. Heat a drizzle of olive oil overmedium heat in a medium frying. Fry the egg mixture into an omelette shape and set aside to cool. Dice when cool.
- Heat a drizzle of oil in a wok over medium-high heat. Add V2 mince and use a wooden spoon to break up the mince. Fry until browned (5-10 minutes), stirring occasionally. Add ABC kecap manis and vegan oyster sauce. Mix well and cook, stirring, 1 minute. Tip into a bowl and set aside.
- Return the wok to medium-high heat with a drizzle of olive oil. Add vegetables and toss occasionally for 5 minutes. Add garlic, ginger and chilli (if desired). Cook until fragrant (approx 1 minute). Add cooked rice. Stir well and season to taste. Toss through chopped egg and basil over heat. When combined, remove from heat.
- Divide rice mixture between 4-5 bowls. Top with vegan mince mixture. Drizzle with aioli.
