Vegetarian fried rice

Ingredients
- 1 pouch of cooked rice - heated up
- 2 eggs
- 1/2 cup Frozen peas, corn , capsicum mix - Microwaved for 1 minute
- 1 tbsp Lee Kum Kee ketchup manis
- Salt n pepper to taste
- 1 spring onion chopped
- 1 tsp vegetable oil

- LEE KUM KEE - SWEET SOY SAUCE
Method
- Heat vegetable oil in a wok/frypan on medium heat.
- Add whisked eggs and gently cook. Move to the side of the frypan.
- Empty cooked rice pouch into frypan. Mix around to seperate rice grains. Mix in egg that was set aside.
- Add vegie mix, ketchup manis and mix to combine.
- Using scissors, snip spring onions into the frypan and mix. Add salt n pepper to taste.
