Vegetarian tofu and wombok pad thai

Ingredients
- Half a jar of Valcom pad thai paste
- Neutral oil
- 150g soft tofu
- 2-3 cups finely shredded wombok
- 2 tbsp peanut butter
- 1 tsp fish sauce
- 1/4 tsp ground chilli
- Lime juice to taste

Method
- Prepare 100 g Pad Thai rice noodles as per packet instructions. Drain and set aside.
- Heat 1 tbsp oil in a pan.Gently add 150 g soft tofu, cut into large cubes.Cook carefully for 1–2 minutes just to warm and lightly colour
- Add ½ jar Valcom Pad Thai Stir-fry Paste and peanut butter and gently coat the tofu.
- Add the drained noodles and stir through until heated.Add:1 tsp fish sauce1 tsp sugar¼ tsp chilli powder1 tsp lime juice or more or less to taste
- Push noodles to one side.Add 1 tbsp oil and 1 beaten egg.Cook the egg for 1–2 minutes, then fold through the noodles.
- Add:2–3 cups finely shredded wombok. Stir just until the wombok softens (about 30–60 seconds). Remove from heat and serve.
