Veggie sushi

Ingredients
- Sushi rice
- Sushi seasoning
- Cucumber sticks
- Avocado
- Kewpie mayo
- Soy sauce
- Nori seaweed sheets

Method
- Bring 2 cups of sushi rice to the boil with 2.5 cups of water. Cover with a lid and reduce heat to a simmer for 12 mins. Remove from heat and sprinkle seasoning over. Leave to sit for about half hour.
- Place nori sheets shiny side down on sushi mat. Using wet hands, press down a large scoop of rice across 2/3 of the sheet, leaving a section free to roll onto.
- Squeeze mayo onto rice. Top with cucumber and avocado slices, then a dash of soy sauce on the rice.
- Using the mat, roll the sushi towards the side without topping. Once it’s rolled tight enough, sprinkle a little water over the nori to seal.
- Leave sushi to set for a little while in fridge. Use a knife dipped in water to cut.
