Vietnamese Smoked Chicken Salad

Ingredients
- 60g vermicelli rice noodles
- 1 smoked chicken breast -finely sliced
- 1 carrot - cut into matchsticks
- 1/2 red capsicum - sliced into fine strips
- 1 cup pea sprouts
- 1/2 red chilli -exclude seeds and finely chop
- 1/2 cup coriander - pull leaves off
- 1/4 cup mint leaves - leaves finely chopped
- 40ml fresh lime juice
- 4 teaspoons caster sugar
- 2 teaspoons fish sauce

Method
- Cover and soak vermicelli noodles in boiling water for approximately 8-10 minutes. Drain, refresh with cold water and drain again.
- In a large bowl, place vermicelli noodles, chicken, carrot, capsicum and chilli. Add pea sprouts, coriander leaves and mint. Toss well.
- In a small bowl, prepare the dressing by combining lime juice, sugar and fish sauce. Stir well until sugar is dissolved
- Pour dressing over combined ingredients in the bowl - toss well.
- Serve in bowls, garnish with some fresh coriander or finely chopped mint. Serve immediately and enjoy.
