Method
- Season Wagyu well with salt and pepper Splash a lil sesame oil in a pan and fry on a high heat for 1 minute maximum every side , you really just want to sear it all over ! Take it off the heat and set aside on a plate
- Get a bowl Micro plain garlic, 1/4 a cup of soy sauce, a few generous drops of sesame oil, 1 cup of saki, half a teaspoon of wasabi. 2 spoons of miso chunky paste, a sprinkle of pepper, toasted sesame seeds and fresh chilies.. combine/whisk all ingredients together well. Set aside
- Preferably in a long deep dish or a deep bowl, place beef and pour the marinade over the top. it’s best if the beef can be covered all the time ( 3 hrs ) in the marinade in the fridge. if not set a timer to flip over the beef in marinade every half an hour to an hour.
- After about 3 hours, take your beef out of the marinade. Get a sharp knife and thinly slice the beef gently. Transfer to a plate. Pour over some of the juices from the marinade but not too muchSqueeze a generous serving of kewpie Japanese mayonnaise And some Chopped spring onion on top #recommended Served with a side serving of boiled rice and pickled ginger as or if desired
