Wasabi and Soy Kingfish Sashimi (Marta’s Ceviche❤️)

Ingredients
- 200g Kingfish Sashimi grade
- 1-2 fresh chillies
- Small bunch of micro cilantro
- 2 tbsp soy sauce
- 1 heaped tsp Wasabi S&B
- 1 tsp mirin
- 1 tsp sesame oil
- 1 tsp rice vinegar

- S&B - WASABI IN TUBE
- LEE KUM KEE - SOY BEAN SAUCE
Method
- In a small bowl, whisk together the soy sauce, wasabi paste, rice vinegar, and mirin. Make sure the wasabi is dissolved and the mixture is smooth. Set aside for flavors to develop!
- Prepare chillies (slice, keep thr seeds for extra kick;D), and make microgreen look nice!
- Prepare the sashimi....Slice the kingfish loin across the grain into even slices, apprx 4 mm thick. Keep the fish as cold as possible until serving
- Lay kingfish on a plate, drizzle the dressing generously over the fish. Most will go in the bottom of the plate, allowing the fish to absorb the flavor.Finish by putting sliced red chili rings and the microgreens over the top of the fish in a random but restauranty fashion or however you like!
