Ingredients
- 1 x heaped tblsp Yellow curry paste & 1 x heaped tblsp Penang Curry paste
- 1 tablespoon neutral oil
- Chicken breast
- Coconut milk
- Carrots
- Broccoli
- Cauliflower
- Shitake Mushrooms
- 1 tblsp Fish sauce
- 1 tblsp Sugar

Method
- Heat oil, add 2 tablespoons Valcom Yellow Curry Paste and 1 tablespoon Valcom Penang Curry Paste, heat gently till fragrant
- add cubed or sliced chicken, stir till lightly cooked
- Add half can of coconut milk, stir till slightly thickened and simmering
- Add the rest of the can of coconut milk, tblesp fish sauce, tblsp brown sugar and all the vegesand stir so all are coated.
- Add lid an simmer on high for 5 mins.
- Turn off stove but leave pot on stove.
- While hot, serve with rice or roti.
- Eat and yum!
