Ingredients
- 4 Large ripe avocados
- 1 shallot, finely chopped
- 1/4 cup sesame soy dressing, Kewpie brand
- 2 Tbls sriracha sauce
- 1 Tbls mirin
- 2 Tbls chives, finely chopped
- 1 Tbls lime juice
- Sriracha pearls (optional)
- Microgreens (optional)
Method
- Dice the avocados into small cubes (about 5mm) and mix with the mirin.
- Add the Kewpie sesame soy dressing, chopped shallot, chives, sriracha sauce and lime juice and mix together gently so as not to mush the avocado too much.
- Using a tartare mould, cookie cutter or similar fill the mould with the avocado mixture, gently remove the mould and top with microgreens and sriracha pearls (if using).
- NOTES:
- You can serve this directly on a plate without using a mould, it doesn't change the delicious taste.
- Sriracha pearls are optional but they do give a nice spicy "kick" to the dish when you bite down on one. They can be purchased at specialty stores or you can have a go at making your own like I have.
