Ingredients
- 1/2 jar Valcom authentic Thai Green curry paste
- 2 x tablespoons of cooking oil
- 400ml of coconut milk
- 2 x carrots chopped into cubes
- 1 x small broccoli
- 1 x piece of Kent pumpkin
- 1 x handful of green beans
- 1 x tablespoon of fish sauce
- 1 x tablespoon of white sugar
- 400g of diced barramundi
Method
- Stir fry 1/2 jar of Valcom Green Curry Paste with 2 tablespoons of oil over medium heat until fragrant
- Add 400ml of coconut milk and stir fry for about 5 minutes
- Add all veggies and bring the heat to high
- Once veggies start to soften add 1 tablespoon fish sauce and 1 tablespoon white sugar and bring to boil
- When veggies have soften add the diced barramundi and cook for 3-5 minutes
- Once the barramundi is cooked, serve over rice and garnish with fresh chilli or extra heat. (chilli optional)
