Ingredients
- 1 carrot
- 1 yam bean
- 2 Chinese sausages
- 2 eggs
- 4 leaves of lettuce
- Handful of Thai basil
- Rice paper
- 1/2 cup hoi sin sauce
- 2.5 tbsp peanut butter
- 2.5 cups of water
- 2 tsp vegetable stock powder
- 1.5 tsp tapioca dissolved in 2 tbsp of water
- 2 pinches of salt
- 2 pinches of sugar
- 1/2 tsp vegetable oil
- 2 tbsp of water
- Fried shallots
- Crushed roasted peanuts
- Ground pickled chilli (optional)
- Bowl of warm water
Method
- Thinly slice 2 Chinese sausages
- Peel 1 carrot and 1 yam bean and finely slice both
- Crack two eggs into a small bowl, add 2 pinches of salt and 2 pinches of sugar then whisk
- Heat up a medium pan, add in 1/2 tsp of vegetable oil and fry the eggs then remove from the pan. Once cooled down, slice into thin strips
- Using the same pan, add the yam bean, carrot and 2 tbsp of water, cook until translucent and no water remains. Remove from the pan and leave to cool. Add in Chinese sausage and cook until translucent. Remove from the pan and leave to cool
- Wash 4 leaves of lettuce and a handful of Thai basil. Thinly slice the lettuce.
- To make the dipping sauce, heat 2.5 cups of water in a small pot and add 1/2 a cup of hoi sin sauce and stir. Add 2.5 tbsp of peanut butter and stir until dissolved. Add in 2 tsp vegetable stock powder and stir until dissolved. Once boiled, slowly add in tapioca mixture and stir until sauce thickens.
- Once cooled, spoon sauce into small bowls for each person and add in fried shallots, crushed roasted peanuts and ground pickled chilli, then mix.
- In Vietnamese families, rice paper rolls are enjoyed together at the dinner table, with all the ingredients placed in the middle of the table. Everyone then makes their own rice paper rolls whilst catching up on the day.
- To make the Bo Bia (rice paper rolls), dip/wet the rice paper in warm water and place on a plate. Once rice paper softens, place lettuce, Thai basil leaves, yam bean and carrots, eggs and 3 or 4 slices of Chinese sausage in straight lines, from the one third mark of the rice paper until the half way mark. Layer the lines of ingredients on top of each other if needed. Fold the left and right sides of the rice paper over the ingredients. Holding the sides down, fold the first third of the rice paper over, then roll into a rice paper roll. Simply dip the rice paper roll into the sauce and enjoy!
