
Ingredients
- ¼ cup Polenta
- 1 cup water + additional water for curry
- 1 teaspoon butter
- ¼ cup cheddar cheese
- 1/5 of S&B golden curry mix in mild
- Salt and Pepper
Method
- Put Polenta and water in small saucepan
- Cook on low heat for 10 minutes or as per the instructions on your polenta, stir frequently to avoid burning or clumping
- Stir in cheese and butter until both melt (this dish works best with freshly grated cheese but if that’s not possible I’d advise sliced cheese instead of pre-grated cheese for the best texture)’
- Add a pinch of salt and a crack of pepper to taste
- Put block of curry in a microwave safe mug and pour one inch of hot water from the kettle to dissolve the block
- Microwave in 2-3 15 second increments, whisking between. Do this until sauce is thick and smooth. If the sauce becomes too thick or rich you can whisk in a little more hot water until the desired consistency is reached
- Pour polenta onto plate followed by curry sauce
