Ingredients
- 1 1/4 cups Sushi rice, 1 cup rice wine vinegar, tsp salt, tbs sugar, 3 seaweed sheets.

Method
- Simmer 11/4 cup of rice for 20 to 25 mins.Turn off heat and cover rice for 15 mins.
- Mix 1 tbs of raw sugar, 1 tsp of salt and cup of rice wine vinegar. Stir until sugar dissolves.Pour rice into bowl and mix in rice wine mixture. Leave rice to cool to room temp
- Place seaweed shiny side down on bamboo sushi matt and spoon a bed of rice 1cm height and 1 cm border.Add filling of choiceCarefully roll sushi firmly.Place in fridge.When ready to eat, cut with a damp knife
