Ingredients
- 500g chicken mince
- 1/4 cup chia seeds
- 2 cloves crushed garlic
- 2 teaspoons crushed ginger
- 2 tablespoons hoisin sauce
- 1 large green chilli finely chopped
- 2 spring onions finely chopped + extra for serving
- 1/2 cup soy sauce
- 1 tablespoon white miso paste
- 3/4 cup mirin
- 1 tablespoon sesame oil
- 2 tablespoons rice wine vinegar
- 1/4 cup honey
Method
- To make meatballs combine the chicken, chia seeds, garlic, ginger, hoisin, chilli and spring onion in a bowl.
- Roll heaped tablespoons of the mixture into balls and refrigerate while you make the sauce. Should make 12 balls.
- To make the sauce whisk together the soy, miso, mirin, sesame oil, vinegar and honey.
- Cook the balls for 5 minutes in an air fryer at 200 degrees Celsius. Then turn the balls and add the sauce over the meatballs. This may have to be done in two batches depending on the size of your air fryer. Continue cooking at 200 degrees Celsius for another 15 minutes or until the balls are cooked through and the sauce thickened.
- Serve balls on a bed of steamed rice and rocket salad, topped with the sticky sauce, extra spring onion and dried shallots.
