Ingredients
- 400g diced chicken breast
- 200g bamboo shoots
- 1 sliced onion
- 100g capsicum, cut into 1cm squares
- Half a jar of Valcom Red Curry Paste
- 400ml coconut cream
- Teaspoon of sugar
- Teaspoon of fish sauce
Method
- Stir fry chicken, bamboo shoots and onion until cooked.
- Add capsicum and red curry paste, frying until fragrant.
- Add coconut cream, sugar and fish sauce, simmering for 4 minutes.
- Serve with steamed broccoli, fresh basil and rice.
